We have a new favorite soup. It is sooooo delicious! Here is the recipe:
Delicious Italian Country Soup
1 pound Mild Italian Sausage
1 large onion chopped into medium pieces
2 stalks of celery chopped
2 garlic cloves minced
5 cups of water
2 or 3 (or more) peeled potatoes chopped
1 can (14 and 1/2 ounce) can of diced tomatoes - undrained
2 tsps salt
1 tsp dried basil
1 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp pepper
1 bay leaf
2 medium (or more) zucchini chopped into medium pieces
In a large pot cook the sausage, onion, and celery until the meat is brown.
Add garlic and cook another minute.
Add the water, potatoes, tomatoes, and seasonings. Bring to a boil. Reduce heat: cover and simmer for 15 minutes. Stir in zucchini and cook until tender. Discard bay leaf before serving.
Just a note: You can also add carrots with the potatoes if you like carrots. We like it with more potatoes and zucchini than is in this recipe.
This is an excellent and healthy meal to have on a cold winter day!
