I made fried squash today. Yellow zucchini, green zucchini, and pattypan squash. Here is the recipe I use 2 egg whites - whipped to be a little frothy with a hand whip. (Using egg whites only will make it crispier.) Add about a cup of milk (or more for a larger batch) using the hand whip beat in flour a little at a time until the batter is just thick enough to stick to the sliced squash, but not as thick as pancake batter. Add some garlic powder, salt, and pepper to taste. Dip squash slices in batter and let some excess drip off - but don't let all the batter drip off! Fry in hot oil, turning to cook both sides. Drain on paper towels and Dig in!

We have a new favorite soup. It is sooooo delicious! Here is the recipe: Delicious Italian Country Soup 1 pound Mild Italian Sausage 1 large onion chopped into medium pieces 2 stalks of celery chopped 2 garlic cloves minced 5 cups of water 2 or 3 (or more) peeled potatoes chopped 1 can (14 and 1/2 ounce) can of diced tomatoes - undrained 2 tsps salt 1 tsp dried basil 1 tsp dried thyme 1/2 tsp dried oregano 1/2 tsp pepper 1 bay leaf 2 medium (or more) zucchini chopped into medium pieces In a large pot cook the sausage, onion, and celery until the meat is brown. Add garlic and cook another minute. Add the water, potatoes, tomatoes, and seasonings. Bring to a boil. Reduce heat: cover and simmer for 15 minutes. Stir in zucchini and cook until tender. Discard bay leaf before serving. Just a note: You can also add carrots with the potatoes if you like carrots. We like it with more potatoes and zucchini than is in this recipe. This is an excellent and healthy meal to have on a cold winter day!

This is my parents home. I lived here from the time I was 12 until I left home for college. I love visiting this wonderful place. If I could go anywhere in the world on vacation I would still pick this spot!

We were shopping in Fort Smith and hurricane Isaac was dropping a few last showers on us, when suddenly the most amazing rainbow came out. It was the brightest rainbow I've ever seen.

One morning I looked out the window and saw this really weird cloud formation. It looked like a tornado but it wasn't. It stayed like that for a long time. I still wonder what it was.

Just a thought for Pinterest

I love to look around on Pinterest, but I am always disappointed to read some of the filthy language that people post to their boards. I would love a way to know when I needed to avoid a board because there was bad language on it. Here is a quote that I agree with!
